Kevin’s career in hospitality began at Capetown’s most renowned luxury hotel, The Mount Nelson, after he had completed a Diploma in Hotel Management. Moving to London, he honed his restaurant skills at the Ivy, before spells in event and hotel catering, notably at Thistle where he developed the Food & Beverage offer. A course in Leadership & Talent Management at Ashbridge Business School has given Kevin a real edge when it comes to heading the team at Dolphin Bar & Grill.

It was this that led to my career in hospitality and still provides the inspiration for the food I prepare for our guests at Dolphin Bar & Grill”

After qualifying at Westminster College and completing his apprenticeship at London’s 4-star Harrington Hall Hotel, Darren spent spells with Marriott and other 4 and 5-star hotels before moving across to fine dining, banqueting and corporate entertaining. He honed his culinary and presentation expertise whilst cooking for the directors at Marks & Spencer’s prestigious Bond Street head office.
